Last night our two oldest kids headed out for Taekwondo practice with Daddy. I knew it would be a late night for them so our youngest and I settled in. I had already planned our dinner to be simple. Just pancakes and ham. No big deal, but this time it was just the little man and I. I went into his room and asked if he wanted to help me make the pancakes. He was so excited he came out with a smile from ear to ear asking what he could do first. As a Homeschooling Mom with very busy, active kids, I do not have much time to menu plan. I have, in the past, sat down for hours putting a week’s worth of meal plans together. I would go through my cabinets to find out what we have, pull out our recipe books and pick which meals we could eat with what we have, write out a shopping list of what I would need to buy, pull out coupons to match and then finally go shopping. It really did take hours and hours, with most weeks at about 4 hours per week’s worth of groceries. I decided about a year ago, enough was enough. Something had to give.
